Bannock Deep Dish Pizza

Long ago in a far off place, a mother was feeding her hungry children and decided to amalgamate bannock, bisquick and pizza to make supper. It worked. The combination saved the hungry children and tasted out of this world. The children lived happily ever after(for that night’s meal anyways.)

Cut to: Present time.

My mom made that deep dish bannock pizza when I twelve and sometimes I still think about it. It was my first deep dish pizza. IMG_3088She can’t remember how she did it (I asked her once.) After some trial and error- Tada.

Bannock Deep dish pizza just like mom made (or fluked).

I made a bannock/biscuit crust (thanks to my mom) that will fill up hungry bellies.

Without further adieu’ Here is Tonight’s show stopper;

BANNOCK DEEP DISH PIZZA

Preheat oven to 400 degrees fahrenheit.

1 1/2 cups all purpose flour

1 cup whole wheat flour

1 tbsp baking powder

2 tsp salt

2 tsp sugar

Mix to combine

cut in 1/4 cup butter or margarine with two knives or use your hands

(I used a cuisnart mixer) till resembles coarse crumbs.

Add 1 cup cold water, mix till a nice pliable dough forms (use all the flour mix).

Spray a 9″ x 13″casserole dish or cake pan with pam spray and lay the dough in the dish, flatten out evenly.

Layer with pizza sauce or ranch dressing.

Now this is the fun part. Top with what ever you like.

Our favorite is ground meat with cheddar and mozzarella. You can try pepperoni or the classic sombrero. Try some vegetarian options. The list is endless.

Bake for 20-24 mins until cheese is bubbly and golden. Cut into 12 squares. Serve with a side salad.
